Chef Spotlight: Chef de Cuisine John Lawrence June 2, 2014

John Lawrence

“I want people to come in to a casual atmosphere, and just have a great experience.” Chef John Lawrence proudly presents bold, honest dishes to his guests. Kimball’s Kitchen is fine-dining, though Lawrence doesn’t emanate towards fussy, overly decorated food that you would traditionally find in a white tablecloth-clad restaurant.

During my sit-down with the Virginia native, I had the pleasure of trying a few of the new menu’s featured dishes. Among them, a top to bottom house-made spin on the traditional Bahn Mi, an Asian influenced sandwich with pork belly, cilantro-chili slaw and a sriracha mayo.

Pork Belly Bahn Mi

Some of the Chef’s influences come from his travels, his youth, and his great-grandmother. In the Pork Belly Bahn Mi, the impressive amount of preparation put into making every ingredient of this dish so impeccable, speaks volumes to the influences of his great-grandmother making every single thing from scratch.

“Growing up, we would have gumbo one night, and turn around the next and have stir fry.” Although growing up mostly in the South, Lawrence moved every 18 months to 2 years because of his father’s career in the military. An eclectic childhood gave the Chef into having a fearless stomach. From eating Haggis on the shores of Loch Ness, to diving into goat in Aruba, squeamish isn’t a word to describe the daredevil Chef by a long shot. When he’s not “hitting the continent” as he calls it, Lawrence is looking for his next quest whether it’s the jungles of Thailand or the historical ventures of London.

I asked Chef Lawrence to give me a run-down of his menu he would order if he was dining as a guest at his restaurant, Kimball’s Kitchen. This ultimate guide from the Chef himself will ensure you an unforgettable dining experience, and there’s no way you’re going home hungry after this one.

Mocha Chocolate Crème Brûlée

Lawrence would begin his feat with the Seafood Tower, usually meant for two- so bring a friend- including their Chesapeake Bay-sourced oysters, local blue crab, and lobster. He would top that with their southern-twisted Lobster Bisque, which has a lobster hushpuppy accompaniment. After a brief interlude, and maybe a few glasses of white wine, try the Grilled Romaine Salad; a rustically presented play on the classic Caesar salad. If you haven’t reached your fill yet, Lawrence recommends the impressive Tomahawk Ribeye, Oscar-style. This 24-ounce monster steak is a challenge in itself, but well worth the stomach space. Not quite that hungry? Try the 14-ounce Bone-In Veal Chop, Oscar-style instead for a smaller size with the same presentation. There’s no way you can leave this meal without a to-die-for dessert, so Chef recommends the Mocha Chocolate Crème Brûlée, which comes in a playful mason jar.

If that play-by-play isn’t enough to get you calling for a reservation, the view you get from any table in Kimball’s flaunts a sound-front wall of windows, showcasing a breathtaking Outer Banks sunset. “When people call for reservations, they always request a window table, which I don’t understand. You get an amazing view from every table. But I’m surprised they haven’t asked to be put at a table in the kitchen, because from here I have the best view. “Lawrence shows me pictures from his post of the sunset’s colors over the sound, growing from a glowing gold, a burning orange, and finally a striking teal that literally seeps through the windows.

In essence, the experience you will find in Kimball’s Kitchen will be impeccable. The passion with which Chef Lawrence works, and the service you will receive will leave you wanting nothing more than a good night’s sleep after an amazing meal.
